Hittin' the continent

Ok, so it looks like we'll be flying into Amsterdam and will have a day to get to Maastricht. If anyone has suggestions as to what's worth seeing (besides the Bulldog and the red light district) please let me know.

I figure we'll hit a couple museums or maybe check out the countryside & then head south. I am in search of good cheese, chocolate, and beer though, so recommendations would be great.
